Cocktail Hour: The Mushroom Open Thread

IMG_3714Toasties! This week’s pairing is my favorite: chanterelle pizza and wine. Are you weird about mushrooms? Sometimes people are. Do you go mushroom hunting? Do you eat them after, or are you afraid to die? What’s the best thing you’re going to eat this weekend? Talk to me.

Open thread, away!

LOVE cooked mushrooms, especially sautéed in butter. The squeaky texture of raw mushrooms makes me want to vomit.

    1. Janie_S +1

Sauteed-in-butter mushrooms are one of my absolute FAVORITES. Especially with a nice steak.

    2. msjinxie +4

I will never, ever, ever understand how people can eat raw button mushrooms on salads. Cooked mushrooms (any type, any cooking method) are some of my favorite things but raw ‘shrooms are sadness in food form.

    3. LeastBittern +4

One of my mycology professors said, “Just don’t eat raw mushrooms. It’s a terrible idea. Lots of edible mushrooms have semi-toxic compounds that are broken down by cooking, and lots of flavor compounds that are made palatable by heat.”

  2. MilesofMountain +3

I really do want to learn to mushroom hunt, I live in mushroom paradise! I’d have to find someone knowledgable enough to teach me, though.

I am planning on making and canning salsa this weekend and I will eat it and it will be wonderful. Also, eating greasy fair food while watching the lumberjack competitions.

  3. elsamac +6

I love mushrooms! I make mushroom tartlets and turnovers pretty often, and never ever serve them to guests except as one of a number of dishes so no one has to get into the I-hate-mushrooms thing.

On another note: I started the first set of Nicole’s workout just minutes ago and (and yes am already taking a break what the phone rang and here I am, whatevvvvvver).

I was on the ground doing the Lady pushups and feeling like a VIGOROUS RADIANT BADASS ATHLETE until I noticed a fleck of my late-lunch tuna melt stuck to my arm.

    1. robotosaur +4

I did a set this morning but my cat kept trying to attack the string tie on my pants. I blame my imperfect form on her.

      1. elsamac +2

Now I’m halfway through Day One’s second set (omitting the Russian twists) and I want to cry and vomit but most of all I want to punch someone HALP.

        1. robotosaur +1

I didn’t even get to a second set of push ups. My noodle arms gave out. I can sit the hell out of a wall though!

          1. elsamac +1

Yeah, I moved from bent-knee push-ups to wall push-ups after re-reading Nicole’s advice to concentrate on form over difficulty. I can’t even begin to get down to the floor on a bent-knee push-up, and they hurt my back to boot. I’m pleased and surprised how much work the wall push-ups are when done right!

          2. greyhavens9 +1

Wall pushups! They are my jam (toast pun not intended). Floor pushups hurt my shoulders too much, so I am all over wall push ups. Plus, they give you a bonus calf workout if you are pressing your tippy toes into the ground the whole time.

I don’t like mushrooms but I have advanced past carefully picking them out of everything I eat.

The best thing I am going to eat this weekend is a tossup! I am going to make a peach cake for my birthday tomorrow, which might be great. But we are going to try and go to my favorite brunch spot and the food there is INCREDIBLE so it might be whatever I have there. (Probably waffles with fruit.)

    1. CatFoodParty +3

I’m the same about mushrooms. I don’t like them but I will be a grown up and eat them if they are in a dish I have ordered.

      And Happy Early Birthday!

    2. the_lovecats +2

      Happy Birthday!
Please tell us more about this peach cake of which you speak. Need. To. Know.

        1. the_lovecats +2

That looks amazing. The plum almond tart it links to also looks amazing. The only thing I can make for myself is Kraft Dinner, unfortunately.

  5. cherrispryte +2

Like olives, I used to dislike mushrooms and now love them.

Guys, I had a wisdom tooth removed on Monday and my ankle’s super fucked up and this week has been spent on perscription-strength painkillers, which are a thing I do not do, and I do not understand my life/this week.

I would cut someone for some good crusty bread to eat this weekend, but considering I’m still in the “soft foods” stage of tooth recovery, it ain’t happening.

    1. elsamac +4

Oof, after my oral surgery, I desperately craved crunchy, crusty foods. I remember watching “Splash” (which was pleasantly goofy to match my doped-up state) and in the fancy-restaurant scene when Madison bit into a lobster shell, I said a sleepy, avid “That looks great.”

      1. cherrispryte +1

Amusingly enough, they first gave me meds i cannot take, before giving me meds i can, so yes, will totally trade vicodin for pre-masticated crusty bread.

    2. msjinxie +1

I had my wisdom teeth removed when I was 18, two days before Xmas. TWO DAYS. On Christmas Day everyone was eating honeybaked ham and rolls and pie and Ma Jinx’s crab dressing and my mouth still hurt so much (and I think I still had some gauze all up in that shit) that even the mashed potatoes were too difficult to eat. I was so, so hungry but all I could get in me was a frozen/melted/refrozen McDonald’s milkshake. And Ma was stingy doling out my pain meds.

      1. elsamac +1

        That makes me

        A. so sad
        and
        B. want to cook you a whole Christmas dinner right now, just because.

        1. msjinxie +2

If it makes you feel any better, in the 15 years since I’ve more than made up for it.
Though if you want to cook me a Christmas dinner I will not dissuade you because I’ve read enough of your comments to know that I should never turn down your cooking.

          1. elsamac +3

Other people’s holiday meals are always so weird, though, right? Like, they put nuts/sausage/shellfish in the stuffing (or they don’t, whichever is the opposite of the one true way), or they call the stuffing “dressing” or the dressing “stuffing,” or they only have one kind of pie, or they don’t even have pie but serve orange sherbet instead*, or they serve goose stuffed with figs when you’re used to turkey or ham, or maybe this is just my inner child speaking sullenly and I should shut up now.

As an adult, I’ve come around to the idea that novel food for holidays can be joyous and festive, but there’s a stubborn part of me that wants to eat all the mashed potatoes and gravy and pie and doesn’t want any of the fancy roasted-squash and caramelized garlic galette that snooty lady made. (That snooty lady is me, btw.)

*I was 19. It was my first Thanksgiving away from my family. I was extremely polite and enthusiastic, and I seem to recall that I wept in the garage afterwards. The sherbet was the last straw.

          2. msjinxie +4

Any right thinking person would be horrified by having orange sherbet for holiday dinner dessert. If there is a place for orange sherbet (and I’m not saying there IS) it’s in summer and/or in punchbowls at dry wedding receptions.

Captain Superquads is totally into being called Captain Superquads and is making a commenter account so he can answer “Feel the Burn” questions. I am also giving away a free training session with myself and the Captain next Friday evening at 7:30pm, so NYC-area Toasties get excited to find out what weird poems I’ll make you write to compete for the prize of having me sweat near and possibly on you.

    1. deleted5310494 +1

Yay! I made an account, just so I can comment on future ‘Feel the Burn’ posts. I did one repetition of the Day 1 challenge from this week and there’s still plenty of day left, so I may do another. Can I just say that I found the wall squats surprisingly pleasant? Definitely went from Lady push ups to wall push ups, so that was fairly clairvoyant of you.

Also, I love mushrooms. Wood ear mushrooms are one my favorite things in a hot pot and I’ve heard that they’re good for lowering cholesterol.

  7. lyetteann +4

I live in the dirty city, so even if I knew how to identify edible mushrooms, I would avoid them for fear of getting cancer the moment they hit my stomach lining

And I’m pretty sure my best meal this weekend will be at brunch with @anachronistique tomorrow, if the goddamn MBTA actually gets me to Cambridge in a timely manner.

    1. mbculver +2

How was brunch? I was down at the Cape this past weekend, so I wasn’t as worried about dirty mushrooms. The best thing I ate was the hot fudge sundae from Four Seas Ice Cream; close second was the lobster roll from Spanky’s in Hyannis.

      1. lyetteann +1

Ah, brunch. Well, the company was fantastic (Anachronistique has awesome friends) but the service was TERRIBLE, and by the time our food came I was so hungry that I didn’t even care that it barely tasted like anything. Definitely won’t go back there.

Mmm…lobster rolls. I can’t believe I’ve been on Martha’s Vineyard three times this summer and haven’t had any lobster yet.

  8. roxythroatpunch +1

That picture is so cruel. I can’t drink wine (damn this fetus) and I forgot my pizza leftovers for my lunch today. SO SAD.

I have no best meal this week, because I’ve had a nasty-ass cold (damn my toddler), and nothing sounds or tastes particularly good. But I do enjoy mushrooms, sauteed in a ton of butter and ton of wine.

  9. elsamac +7

Oh, the best thing I am going to eat this weekend? That can’t be predicted yet, but this week, I’ve had:

    – grilled lobster
    – three-meat three-cheese lasagne
    – chocolate lava cake and a bite of tiramisu
    – scallion-cheddar biscuits
    – pan-seared zucchini planks, garlic spinach, farmstand tomato, and sautéd sweet onion with three cheeses and avocado on an onion roll, served with steamed broccoli with smoked paprika almonds
    – two (TWO!) tuna melts with avocado, garlic spinach, farmstand tomato, and avocado, served with snap peas and red grapes
    – blackberry scones made with backyard blackberries

    so I’m not too worried.

      1. elsamac +10

No, truly: my life this week was a sordid tangle of panic attacks, back spasms, and family anxiety, all hastily soldered together by unconditional love* doled out at home.

What you really want: for me to be your personal chef. My life is a mess; my cuisine is my unassailable armor.

*The Fella and I have developed a new shared gesture: we clasp forearms warrior-style and say “BEAMING,” which is shorthand for “I am beaming love and strength to you, my beloved.”

        1. sednarea51 +5

I am truly sorry that you had such a shitty week. but oh my god, your description of the “BEAMING” gesture fills my heart with light and joy.

This weekend I am making a massive amount of Lentil soup to freeze in preparation for Grad School starting on Monday. I am also going to make Sweet Potato, Black Bean burgers for long term freezing as well. I’d like to make one more thing for long term (mid term) storage my next go to would be Lasagna but I stopped eating dairy. Any ideas?

Anyway the best thing about this massive amount of cooking with a purpose plan is that I have only been here a week and I don’t have any friends yet so I am excited to have a plan to fill my time that does not involve pre-reading my Physical Oceanography textbook. (And the subsequent Physical Oceanography related panic attack.)

      1. elsamac +1

There’s something deeply satisfying about filling the freezer with delicious homemade food just before the semester starts, isn’t there? How smart of you to get all those delicious dinners lined up ahead of time. I spent many a late afternoon class half-daydreaming about the baked stuffed potatoes or black bean soup sitting in the freezer at home.

Since you’re already cooking sweet potatoes and black beans, what about something like black bean & sweet potato pupusas? I don’t have a recipe, and for all I know, mine aren’t even authentic pupusas but stuffed arepas; I use this tutorial that Gluten Free Girl’s friend Karen allowed her to post, but I stuff them with something highly seasoned instead of serving them with something to stuff inside.

I usually stuff them with either cheese (obviously not suitable for you) or nice thick and spicy refried or stewed black beans, sometimes with diced sautéed or mashed sweet potatoes mixed in.

To freeze, I lay them not touching on a baking sheet lined with parchment or plastic wrap and let them freeze solid, then stack in a bag or Tupperware. I reheat them either in a hot oven or in a frying pan with just a drop of oil, but a toaster oven might work very well. I love having a batch of them in the freezer. One or two with some salsa and a salad or (more traditionally) a spicy slaw make a great dinner.

And as a bonus, it doesn’t require a lot of extra ingredients: one bag of harina, some oil, and some water, and whatever seasonings [onions, garlic, cumin, are some of my favorites for black bean filling] and you’re all set.

I used to be a huge huge mushroom fan, and then I found a mushroom collective growing out of my carpet in February.

Not such a big fan anymore. I can eat them again, but just barely and only if I’ve forgotten for the day that the horribleness had even occurred.

    1. dinnerforquitters +2

Did you take pictures? I can never be an adult because I would’ve taken pictures and played with them until someone told me to stop.

      1. Prawns +7

I took no pictures because I was too busy playing the head tape that says I’m clearly not an adult. (ETA: I’m not an adult because I allowed *mushrooms* to grow from my *carpet*, *indoors*)

Then my building manager came and removed them because I think he thought I might start crying and never stop if I had to take care of them myself. Which is accurate.

        1. dinnerforquitters +1

I feel you. I’ve had that carpet. It was a dark time. I hope you feel better (already, or soon)! Because I get that.

I still would’ve played with them, though.

        2. elsamac +20

The biggest open secret in the world: NO ONE is an adult by that measure. Everyone has some version of your carpet mushrooms. Maybe it’s the perpetually blinking light on their dashboard or the pile of disregarded bills stuffed in a drawer or secret rotted wisdom tooth (oh hi!) or their festering feelings of sibling rivalry or their inability to make and eat a balanced dinner ever or the library book that’s a year overdue.

Everyone has something, some secret humiliation that makes them fear they’re not a proper grown-up. For me, I knew I was a proper grown-up when I figured that out.

        3. Girl Named Jack +5

I have also had carpet mushrooms, in my bedroom closet. They grew to be quite big because I never shifted that bottom geologic layer of laundry, until I finally did, and there were, like, four mushrooms, of the size which you could buy at the grocery store. I am not proud of this place I lived (see also: field mice in the stove and the toilet that fell through he floor whilst my ex-husband squatted thereupon). I just want you to know that carpet mushrooms are A Thing.

    2. robotosaur +2

That happened to me once! My air conditioner was apparently an empty box that dripped water everywhere and did not have a motor in it, and my roommate and I only discovered this because the mushrooms grew big enough for a paramour of mine to notice.

    3. loren_smith +2

I feel your pain. This happened to me (right through my collection of historic Sweet Valley High books!) and when I notified my building manager/slum lord all he said was that I better hope they were magic mushrooms so that he could sell them 🙁

    4. socktantrum +1

I had bathroom ceiling mushrooms in my old apartment… I almost cried when I looked up during my shower and saw them growing. Mostly because my landlord lived in Hawaii and I lived in New York and I knew I was going to have to deal with them myself.

1:29 And Martha said, “Behold, I have given you every ounce of cheese, which is upon the face of all the earth, and every box of macaroni, in the which is the basis of a cheap dinner; to you it shall be for cheese. And to every elbow of the macaroni, and to every ounce of cream, and to every thing that creepeth upon the earth, wherein there is deliciousness, I have given every ounce of cheese, and it was so. ” 1:30 And Martha saw every thing that she had made, and behold, it was a very good thing.

I’ve made this and it’s AMAZING, but I highly recommend throwing in some applewood smoked gouda if you can find it.

I won’t eat anything fun this weekend. My friends are going out for Japanese tonight but I can’t afford that crap right now so I’m in a sulk and am protesting fun. However, tonight a handsome man will make me nachos. His nachos are excellent and he is handsome, so whatever. This weekend I will eat compromise and refried beans.

    1. elsamac +4

Nachos from a handsome man is not nothing, y’know? I like Japanese restaurants, but I think I’d take Handsome Nachos over that most days.

      1. dinnerforquitters +7

HANDSOME NACHOS. Nacho dinners have been transformed. “Do you want to come over? We’re having Handsome Nachos.” Thank you. Because this is the internet, I want to reassure you that this is 100% sincere. This is a gift you have given my family.

  12. KivrinEngle +4

I like mushrooms, but only small ones, preferably without gills on the underside of the cap. Shiitakes and portobello mushrooms freak me right the hell out.

  13. eiffeldesigns +3

I have no idea what I’m eating this weekend, but I assume there will be tomatoes involved because you gotta eat ’em while the season is still goin’ strong. And I really have to get my ass in gear and do canning. I have only done a few small batch jams. Compared to last years 80+ cans of stuff I’m being a total freakin’ slacker.

    1. practical cat +1

I want to can some tomatoes but I don’t think I have the mental/physical strength to haul back a sufficient amount from the farmer’s market…

Yesterday my office catered sushi for a goodbye lunch. The fact that I got my two favorite rolls for free justified my dinner in which my sister and I dropped fifty dollars on Burmese food: 1 tea leaf salad ALL MINE MINE MINE, 2 orders of balada bread, 1 order of rainbow chicken, 2 ginger lemonades. I’m still full.

I don’t know what I’m eating this weekend but this week I learned how to make a Maker’s Mark Manhattan with cherry bitters so whatever I eat will be sort of an afterthought.

    1. msjinxie +2

I recently discovered the joy of good whiskey and fancy bitters with no other additions (except maybe one of those neat, giant square ice cubes) and Oh Bliss. The only downside is that it’s making me lazy about making cocktails, so all my fancy “can’t drink on its own” booze is being ignored.

      1. amativus +1

It really, really is but actually we were eating at Mandalay. I might like Mandalay even better – if Burma Superstar is the glamorous Friday night first date Burmese restaurant, Mandalay is the weekday, take-your-parents-out Burmese restaurant.

  15. Jizzcliner +1

I love smitten kitchen, but my go to recipe is the Ideas in Food recipe for macaroni and cheese http://www.seriouseats.com/recipes/2011/11/ideas-…
It’s quite similar in ingredients to the SK mac and cheese, but uses evaporated milk instead of bechamel. This is a Very Good Idea, because the cheese sauce comes through more without the starch, and the texture of the cheese sauce is also improved. Have you tried it?

    1. madgehowlet +1

I have not tried this because I am very committed to the bechamel, but I am intrigued. I will try this, but I will also add that mustard powder is essential for the cheese sauce. I don’t know why, because I hate, hate mustard, but it does something magical. Also, nutmeg.

      1. Jizzcliner +2

Nutmeg is a classic pairing with bechamel, as are mustard and cheese. I also find that cumin goes well with cheddar. All sorts of indian spices go well! We always keep our kitchen stocked with National masala mixtures.

There is a nice video/explanation of cheese stabilization on this page http://www.chefsteps.com/courses/science-of-pouti…. The home version replaces the milk and sodium citrate/hexametaphosphate mixture with evaporated milk, the sous vide warming with warming on a stovetop, and the blender with an immersion blender or whisk.

You could also do something like melt some cream cheese, or even some other processed cheese, into milk or beer or wine or stock or something, before stirring shredded cheese in. They often have more than enough stabilizer. This works really well for fondue, for instance.

It is the working season again for those of us who educate your young folks. I miss you, Internet! (People who e-mailed me last week re. DC adventures, I will be getting on that this weekend. If you are interested in DC adventures and have NOT e-mailed me, there is still time!)

I love all mushrooms and all the black liquorice, even/particularly the salt liquorice, and the best thing I eat all weekend may be the cottage cheese I’m eating right now.

  17. sednarea51 +2

I have leftover kebabs and pita from last night’s Greek dinner with my wonderful foodie aunt, and said foodie aunt also suggested I take home the leftover French fries and make a Spanish omelet out of them, which I think was an astoundingly clever suggestion. And I have a recipe for baking eggs in little pattypan squash that I’m going to try. The zucchini bisque that I carefully prepared earlier this week was…not so good, so I’m hoping eggy squash will end up working. Fingers crossed!
And the best thing I ate this week was probably dessert at last night’s Greek soiree; it was called galaktoboureko, and it is a delicate lemony-flavored custard wrapped in phyllo dough, and it tastes like French-kissing an angel.

    1. lyetteann +4

GALAKTOBOUREKO. Let me tell you: the best part about marrying into a Greek family is THE DESSERTS. I can’t spell any of them, but I can eat them all day.

Yes. I almost stopped after two sets. And I may have said, “I am a BEAST” out loud to myself multiple times through the third set to get through it.

        1. elsamac +1

I did stop after two sets. My doc and my PT gave me carte blanche to pursue any exercise I feel good about, but only if I’m cautious in my first few attempts. Oh, I went to visit some friends in Virginia not too long ago, and we picked tons of chanterelles. My hosts cooked up the mushrooms in butter and served them with pasta, and it was good.

My heart is breaking. Last night the love of life told me he can’t be with me. I lay awake and listened to Leonard Cohen on repeat for hours, unironically. Now I have to have a fight with the girl my friend is subletting her flat to before babysitting small children for 8 hours. I really wish I could stay in bed with Leonard.

It’s like this awful dread has taken over my whole body and is pulsing through me every minute, even when I manage to ‘forget’ for a second.

Lobster mushrooms are the only mushroom I would pick, then sautee (with butter and white wine) and eat. They are wonderful, and as far as I know, there’s no poisonous mushroom that looks just like it. They taste more or less like lobster.
Best thing I’m planning on eating this weekend? Endless crab tomorrow, as I will be stuck at a casino all day. For work; I won’t be “stuck” there because I’m a gambling addict.

I made it to Texas. There have been two thunder storms where most of the sky remained blue. Roommate has a cat named Bagira, who is good company. My bedroom is set up and I have a parking lot, and office. (Well table in the outer office of the office I will eventually share once a great move out and office swap occurs) Mostly I am terrified of being in three graduate level classes. I have been cleaning things to avoid reading articles and textbooks, and fighting off the urge to begin watching ye olde “How to do Calculus” YouTube videos.

I always miss the bulk of these because I am cooking. Tonight: Isa’s edamame pesto (which I actually like more than “regular” pesto, woe) only no mushrooms because I cannot even with mushrooms. That means, though, that there is just a little “too much” pesto and I can feel ok about eating it by the spoonful while still having plenty to coat my pasta.

That’s probably the best thing I’ll eat this weekend though I’m planning on some peach jamming on Sunday so it could be too close to call.

Two day drive back to start my last year of PhD coursework this weekend, so I’m eating crappy road/travel plaza food and chugging tons of coffee. I may eat better later this weekend depending how much energy I have to go shopping when I get back tomorrow, and whether or not my subletter burned down my apartment or destroyed all my kitchen stuff (fingers crossed, sort of hyperventilating).

VERY IMP QUESTION U GUYZ: I need trashy movie recommendations!! I’m stockpiling for when my partner and I are jetlagged from our 13+ hour time shift. We like brainless scifi/action and chick-flicks/rom-coms. The catch: no casual racism please! Pitch Perfect was mostly good but the way they treated the Asian characters was crappy. (the queer character too. sadface.) I have Bling Ring and Pacific Rim on my list so far. Any more ideas?

From what I know of Earth, your catch wipes out most of the Library of Congress and all of Netflix. Watch Pacific Rim 13 times.

Perks of Being a Wallflower was surprisingly adorable and touching. Hermione’s Pittsburgh accent is not at all accurate, but cute all the same.

Haha yeah that movie was cute up until the (SPOILER)

surprise! Childhood sex abuse flashbacks. Thought it was going to be a cute story about an outcast finding friends, then we spent the rest of the night barfcrying. Seriously why is there not a trigger warning on movies with content like that. (and yet showing explicit consensual sex is like, totally not ok)

I LOVE MUSHROOMS. My most favourite mushroom thing is sautéed mushrooms on thick toast, with truffle oil. And lots of butter. I have never been mushroom picking though 🙁

I missed Cocktail Hour because I was out having actual cocktails with actual New Friends! And I kept my poor kid up until 11:30 running around and playing with a Nerf warhammer. But I was out of my house! with people! and alcohol!

Today I began my Birthday Week by dragging poor kid the outlet mall for hours and hours. I returned with three(!) pairs of shoes and cute skirts and now I have a delightful g&t.

I’m glad we’re talking about food, but I’ve eaten only crap. And I strongly disapprove of mushrooms.

I moved into a weird little house in Gary, Indiana, about 20 years ago, and my first spring in the house I discovered a patch of morel mushrooms in the back yard. My neighbor was certain that I was going to die or something from eating wild mushrooms, but morels are easily recognizable. That little patch of magical deliciousness was definitely the best thing about the house. The house is gone now, scraped to the ground after the neighborhood became part of the Indiana Dunes National Lakeshore Park. I hope some of those little mushroom spores live on, though.

How was brunch? I was down at the Cape this past weekend, so I wasn't as worried about dirty mushrooms. The best thing I ate was the hot fudge sundae from Four Seas Ice Cream; close second was the lobster roll from Spanky's in Hyannis.
